很多人都對歷史很感興趣,那些曾經雄霸天下的強大帝國,古今的連繫可以從佳餚中找到,特別是中西部意大利菜。這餐廳有個酒窖,可以一邊喝酒,一邊品嚐羅馬菜,確是賞心樂事。當我們品嚐某種菜式的新材料,亦可以加深了解它的文化及歷史,因為歷史影響語言、宗教、建築、哲學和法律,我們品嚐意大利菜,亦會了解一下意大利和意大利菜的變遷。

羅馬帝國曾是最強大帝國之一,意大利菜亦反映了一些影響。生拌牛肉片,味道非常獨特,上面放些迷迭香,令它更加美味;隨著海港的商貿活動越益頻繁,燈籠椒亦被帶進意大利菜,廚師用它革新了傳統海鮮製法,扇貝很新鮮爽脆;牛仔肉配帕爾馬火腿和洋蘇葉是很傳統的羅馬菜;而吞拿魚則先用意大利香草煎,然後焗,再配上紅胡椒籽汁,很鮮味。甜品方面,覆盆子芭菲,賣相一流;意式芝士蛋糕配焦糖咖啡汁,用作羅馬餐的甜品最合適不過。對於意大利菜,咖啡很普遍,意式芝士蛋糕會用咖啡做材料,焦糖咖啡又香又提神,稱得上色香味俱全。

在傳統香港當鋪品嚐現代英國菜

你可能還未入過香港當鋪吧!但香港的當鋪日漸淘汰,實在可惜,其實當鋪很有趣,這份傳統和其獨特風味,許多人記憶猶新。和昌大押已不是真的當鋪,現已變身為時尚的現代英國菜菜館,餐廳的獨特處在其古舊建築,所以也突出了這兒的歷史色彩,牆上掛滿香港當鋪的照片,半舊環境外,陳設也追求家常感覺,家具由各方搜羅得來,酒吧設計仿昔日當鋪的櫃檯,欄柵永遠高高在上,其中一層佈置如客廳,適宜知己小聚;若正式吃飯,則要再到另一層的飯廳。

要正式吃一頓英國菜,就再更上層樓,那裡同樣留有點點當鋪特色,鐵閘也是仿舊當鋪用的閘,餐廳地方寬敞,氣氛閒適,桌椅均有家居風味,餐廳刻意經營傳統英式家居風情。菜式天天換,由街市買時鮮炮製,餐單由大廚設計,海鮮吧一定有新鮮海鮮供應,例如愛爾蘭蠔,或是傳統的炸魚薯條,用鹽、胡椒和啤酒醃過,皮脆肉多汁;另外,不客易在市場買到的羊肩,加上蒜和迷迭香烹了四、五小時,味道濃度豐富;拔蘭地薄脆釀入忌廉的糖脆卷,是英國70年代流行的飯後甜品。

我們走訪過出色餐廳,品嚐過非常有趣的食物,但有時要樂在其中,就要具備學問及探索一番,今天有幸訪問星級大廚菲臘艾卓百,他會教我們如何欣賞法國菜,他那著名的餐廳,為香港帶來特定的菜餚,那裡有一道特別的招牌菜,就是沙丁魚,烹調過程中結合不同材料,例如白麵包、紅椒、柚子,黑橄欖亦與別不同,適合於夏天品嚐。大廚菲臘出名著重味道,及菜式的協調和諧,他菜單的主菜就是野海鱸,烹調時會用上很多不同的味道,又喜歡於菜式裡加入一點酸味,讓食客感到清新,亦容易消化。他又認為,整道菜最重要的一部份就是甜品,因為甜品是一餐的完結,會給人最深刻的印象,例如巧克力甜品配熱情果,將糖及醱味結合在一起,互相平衡;而紅梅配餅乾,法語叫油酥麵包,再搭配玫瑰和荔枝,很新鮮美味。

採環形開放式廚房的世紀大廚餐廳

法國廚師兼餐廳老闆,亦被稱為「世紀大廚」的Joel Robuchon,於2003年在巴黎開設第一間餐廳時,以環形吧枱圍着中間的開放式廚房,顧客根據個人口味點自己的菜式,這是很新的概念。在這獨等的餐廳設計中,你可以享用到多款精緻的開胃菜,如番茄千層酥(Le Crabe),用兩片千層酥,夾着青蘋果、牛油果和由法國入口、味道較濃的番茄為主要材料,可謂賣相和味道都一流。
